Dippin' things in chocolate






Who would have known? Well I didnt LOL maybe others dont either, but you can make the easiest holiday treats ever with Almond bark bars, and random things that would taste good covered in chocolate!

They have Milk Chocolate and White Chocolate Almond Bark Bars, I was able to pick some up at Wal-Mart for under $2!
I dont know if that is a deal or not as I have never bought them before, let alone heard of them.

I took Pretzel rods, spread Peanut butter on the top portion only and dipped in chocolate, sprinkles, and let cool.








I also have been dunkin Oreo Cookies,Butter cookies, freshed baked chocolate chip cookies...people have given me ideas, of potato chips, cheese cake bites, I even did cake balls, recipe and pics coming soon!

My Potato Salad!

I made some Potatoe Salad for Thanksgiving and I think it was pretty good if I do say so myself :)

It is pretty easy to make!

Potatoes
Mayo
Relish
Red Onion
Boiled Eggs
Vinegar

All I did was boil the potatoes, not all they way as you would if you were making Mashed Potatoes, but just enough that a fork will puncture it.

One cooled, skin and dice up into bite sizes pieces.

Add mayo (as much as you desire but not too much), Relish, Diced Red Onion, Boiled Egg (as much as you desire), A spoon of vinegar.

Mix together and put in fridge!

Banana Split Pie

I recently went to a friend's Philly Cream Cheese House Party and we each got to make and bring our favorite dessert. I of course brought my favorite Banana Split Pie! My granny used to make it when I was a kid and I made her make it all the time! So I had to learn to make it, and I did! I tied for winner of the best dessert brought, but it was by far NOT the best to me, they were ALL really good!
Here is what you need to make this YUMMY pie!



1 - Ready Made Grahan Cracker Crust (I would say two because I always get 2 pies out of this receipe)
1- 8 oz package of cream cheese - softened
1 cup powdered sugar
1 egg
1 teaspoon vanilla
1 small can crushed pineapple - drained really really well (I put in strainer and push push push out all the juice)
1 lb of bananas, sliced
1 container cool whip, thawed
1 small jar maraschino cherries
1 tablespool walnuts, crushed


Prep:
Combine cream cheese, powdered sugar, egg and vanilla; beat until smooth.




Spoon into pie crust. Not too much because you wont have room for the rest of the ingredients.(this is why I say it will make 2 pies)





Next, layer each remaining ingredient in order: Pineapple



sliced bananas



cool whip





Top with Cherries and walnuts. (I slice the rinse the cherries well, if you dont the top of the cool whip will run red from the cherry dye)






Let this sit in the fridge for 1 hour.


YUMMMMM!

"Ghostly" Shepard's Pie

I was going to make Shepard's Pie anyway and I came across this reciepe so I tried it out *Yum* I did omit the garlic, eggs mixed in the potatoes, and onion, but other then that it was GOOD! Michael had his little cousin over for a sleep over and his cousin loved it! Michael ate a good amount of it, but Michael gets weird with his food sometimes, especially when he is excited and has other things to do!

1 lb lean (at least 80%) ground beef
1 medium onion, coarsely chopped (1/2 cup)
1 bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen mixed vegetables
2 cups Progresso® diced tomatoes with Italian herbs, undrained (from 28-oz can)
1 jar (12 oz) beef gravy
1 3/4 cups water
2 tablespoons butter or margarine
1/4 teaspoon garlic powder
1/2 cup milk
2 1/4 cups Betty Crocker® Potato Buds® mashed potatoes (dry)
1/4 cup grated Parmesan cheese
1 egg, slightly beaten


1. Heat oven to 375°F. Spray 12-inch skillet with cooking spray. Add beef and onion; cook over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain.
2. Set 12 peas (from frozen vegetables) aside for garnish. Add remaining frozen vegetables, tomatoes and gravy to beef mixture. Heat to boiling. Reduce heat to medium-low. Cover and cook 8 to 10 minutes, stirring occasionally, until vegetables are crisp-tender.
3. Meanwhile, in 2-quart saucepan, heat water, butter and garlic powder to boiling. Remove from heat; add milk. Stir in dry potatoes and cheese. Add egg; blend well.
4. Spoon beef mixture into ungreased 8-inch square (2-quart) or oval (2 1/2-quart) glass baking dish. With large spoon, make 6 mounds of potato mixture on top of beef mixture to resemble ghosts. Place 2 reserved peas on each mound to resemble eyes.
5. Bake 20 to 25 minutes or until potatoes are set and mixture is thoroughly heated.

First Grade Dinner

Michael got to put in a request for what HE wanted for dinner on his first day of First Grade! TACOS!!!!!!!!!!!!!!!!!!!!!

Wasnt that bad...actually turned out pretty good (I made a different way then normal - which has always been the El Paso Taco Kits LOL)

I bought a BIG thing of taco seasoning...so I would just have it incase the want for tacos arised all I would need to do was to buy tortillas *which is hardly ever since we keep them in the house* Sour cream and cheese.

So I browned the meat, added seasoning per the directions *plus a tad bit more*
Then a friend made some for us at work one day and she mixed in refried beans to her taco meat - what a neat concept (well they do it at Taco Bell dont they?)

So then I added a can of Bush's fat free refried beans to the seasoned meat.

let it cook, and put it in tortillas, with Sour cream and cheese *we dont require tons of things on our tacos LOL*

He loved it this way!

I mean he loves them anyway but this way he ate TW0!

Asparagus & Pesto Pasta w/ Salad

I read a post today on DFWareamoms.com and someone wrote that they made Pesto pasta with chicken...got the wheels in my head turning...I didnt want to make chicken, and I couldnt get past the chicken in the can idea...so I was browsing the recipes.com site and found an Asparagus Pesto Pasta...I read it but didnt write it down...i winged it LOL

We went to the store I got the Pesto Basil Sauce it was found in the fridge section of the grocery store (you dont have to even cook it)

I got home fried some garlic and onion in a frying pan...with some oil...then added some asparagus when it was cooked, I removed it from the heat...adding the pesto sauce (since it says do not cook - I just added it to the hot asparagus, garlic and onion.

Boiled some spaghetti noodles, made some salad with Ken's dressing :) YUM!

Tossed the pesto mix with the hot noodles topped with Parm. Cheese!

Macaroni, Tuna Salad

This dish is so easy to make and so yummy to eat :) If you are in a cruch for time and money make this it is good for lunch or dinner :)

Box of Macaroni (I like elbow, but sometimes get the bow ties)
Mayo
Onion
Can of Tuna
can of peas(if you want them - if not that is totally up to you)

(some people like to put boiled eggs in it, but I dont, totally up to you if you want them in it)

So just boil the noodles, cool, and add mayo, chopped onion, and can of tuna, salt and pepper to season...use as little or as much ingredients as you wish :)

Put in fridge (I like to wait a few hours before I eat it and it always taste better the day after)


Lemon Chicken Piccata (Thanks Dream Dinners)

Yes we tried yet another dinner from Dream Dinners! (Dreamdinners.com) They have some in VA too!

This one was Lemon Chicken Piccata (soooo good) I think this was better then the Hawaiian Chicken and I thought that one was good too!

A plus was Michael liked this one as well! ate it all (and dont tell him but it had capers and artichoke hearts in it)

Not sure what the EXACT recipe was but the prep at Dream Dinners was less then 5 minutes!

and the cook time was about 30 minutes! Not bad at all!


Rachel Ray should feature this on 30 min meals because it was YUM!

(this is not a RR recipe - this is a dream dinner recipe and I am not sure if they got it from some where else but it is good)

I will be going back to Dream Dinners to make this dish soon!

I served with Rice (Jasmine Rice) and Garlic Bread, it was recommended that I serve with Brocolli and Garlic bread :)



Hawiian Chicken

Last week we were invited to Dream Dinners! Let me tell you this was an awesome experience! I am highly considering joining and making dinners! The food that I Prepped there and brought home to make was GREAT! I picked Hawiian Chicken (we could make a six serving meal, so I divided mine into 3 servings and switched my other half with a friend) Sooo easy! Just fried up the chicken, and added the mixture we made at Dream Dinners! Which I wish I remembered the recipe cause now I HAVE to go back! LOL but I dont mind a bit! The prices were great!

Here is what was for dinner...and Michael LOVED it which says alot! Since he is a weird eater :)




Michael Loves Spaghetti!

We had dinner with Mike's mom not too long ago, and she makes the very BEST Spaghetti Sauce, she made LOTS of it so we took some home to freeze! which is a VERY good idea, Make a lot of something and freeze it for another day, saves ton of time and like spaghetti sauce I think once it is frozen and recooked it tastes so much better :)
All I had to do was boil some noodles, re-heat the sauce, and since Michael LOVES Texas toast I popped a few in the oven...one box of Texas Toast last a while in our home.
Michael is a odd child and likes salad :) so we ate some salad with our dinner.

YUM!

With Michael's salad he had ranch dressing...but me I had this Ken's Steak House Raspberry Peacon dressing (mmmMMmm goood and the calories are not bad at all!)

Wal-mart fried chicken?

Okay so everytime I go into Wal-mart it smells soo good, they cook up fried chicken and some other fast dinners.

Well the chicken looked really good and Michael was asking for fried chicken for ever!

So I caved and got it...a container of this Wal-mart fried chicken was $5.99! How good is this chicken? That is the question I asked myself...welll it wasnt GREAT and it wasnt BAD it was OKAY! If you know what I mean.

I also made mashed potatoes (of course I took a short cut and made it from instant...less then $1.00!)

annnnnnd yeap you guessed it! Squash! Again...am I getting sick of it you ask...nope not at all I can eat that stuff alllll day every day!

Annnnd Dinner served!

Sprouts Stuffed Clams

I was at Spouts and they had stuffed clams (2 for $1.98) what a deal!
SOOOOO guess what was for dinner? Yeap that is right stuffed clams...we also (since I am on that squash kick) had some squash and some potato salad (it doesnt "go" with this meal but I had it and so I used it) it was actually a baked potato salad.

Baked Chicken, Squash and Broccoli

I am on a squash kick, and I had the taste for some rotisserie chicken. Sooo I was headed off to Kroger (Grocery store) to get me a chicken...total price was $7 for a small one. It is cheap, already cooked and good!

Since I have been on a butter squash kick, I take a tbsp of butter (country crocks) and slice the squash in a pan, place a cover and let simmer until squash is tender and then add some salt YUM!

broccoli was in a bag - the steam bags - FAST and GOOD!

Fast Dinner

Here is our fast dinner, I was running behind and didnt want to spend time cooking on dinner, so we ran over to Tom Thumb and I picked up some deli made ribs (they were just grilled I guess cause no season or taste what so ever was on them) So I brushed with bbq sauce.
Also made some mashed potatoes (i hate em out of the box but this would have to do today!)
and some corn bread (that I actually made in the oven so we DID have to wait for that)

There you have it fast and easy dinner :)

Honey Mustard Chicken

Today I felt like making some chicken, so I made Honey Mustard chicken! YUM!

I took a pack of chicken strips, and fried it in a pan with a little oil.

until it was cooked almost done.

Then I took some Mustard and mixed with honey and some brown sugar.

Brushed on chicken strips and baked for 10 minutes.

I also made brown rice and some mustard greens to go with it!

YUM!

Breakfeast in our home



Yeah it isnt all the time I cook breakfeast - we usually have cereal or toaster waffles, but on the weekends I try to cook something here is what we had this weekend. we all had eggs, Michael had scrambled with cheese, me - over easy (as I hate scrambled eggs) and we had bacon to go with it! Michael is a big bacon boy! Daddy - ehhh veggie sausages, remember he doesnt eat chicken, pork, cow, but he eats dead baby chics! LoL

This was my microwave creation meal


Okay so this day I didnt want to cook at all - but had to feed the kid something!

Ooooh I have frozen dino nuggets - popped them in the microwave 1 minute 30 seconds.

Broccoli - zapped a bowl of frozen broccoli in the microwave 2 minutes - done!

Now I just love the easy mac packs...you open the noodles, microwave them per the package and mix in the cheese sauce BAM you are done!

BBQ Meatballs and Rice



Here is another quick and easy meal that we had in my house...and it is cheap too!

All I did was buy a bag of the frozen meatballs (they were 4-5 dollars for a nice sized bag), BBQ sauce - what ever BBQ flavor you like - I get the regular of what ever is on sale (i got 1 bottle for one dollar!!!)

So what I did was poured the frozen meatballs into a pot and poured the BBQ sauce over and let cook on low heat so that the flavor would simmer into the meatballs.

I also popped in some cheese sticks for him - dont know why I did but it felt sorta Italian....lol


Michael loves this dish and so do I - because it is fast, easy and cheap!

Broccoli Alfredo with Shrimp


Okay so if you want a REAL super easy, cheap and fast meal that looks like maybe it took you a while to make then try this!
I dont know I was cruising the freezer asile in the store looking for something quick and good and I saw chicken alfredo the kind you pour out of the bag into the skillet and heat...well My sons daddy doesnt eat any meat except shrimp. ANd they didnt have any skillet things with shrimp alfredo.
Soooo I was looking around and I thought...I can totally buy some Lipton noodles, the Broccoli alfredo!!!!!!!!!! So I went and got 4 packs, (totally should have only gotten 2 packs because it make aLOT!)
then I walked by the frozen shrimp in a bag and I got a small cocktail ring of frozen shrimp for 3 dollars and some change. Then I got a bag of chopped broccoli to add into the noodles...and some cornbread mix.

Total....


Lipton Noodles 1.25 each x4 - $5.00

Shrimp Ring - 3.50

Chopped frozen broccoli - 3.00

Corn Bread - .50

total meal cost - $12.00


And looking at the pot I can feed well over 3 people (we have 3 and we have practically a WHOLE pot left!)

Rooster Sauce :) Yummmm



I just love love love this rooster sauce - well it isnt called Rooster Sauce but it has a rooster on the bottle :) It is Sriracha Sauce :) And I eat this on mostly EVERYTHING! It is perfect...I wonder who else loves this stuff as much as I do? If you love it let me know! If you like hot sauces and you have not tried this - you should go out to the store now and buy some. You can find it in the asian part of the grocery store. It is with a green top. But I do warn you use a little bit at a time. a little goes a long wayyyy :)

Fried Rice with Shrimp




Okay I am determined to conquer this Fried Rice thing - this is my attempt to do so :)

Left over rice (because I read the secret to good fried rice is Cold left over rice)
I used Brown rice - but feel free to use what ever rice your lil taste buds like.

I cut up some onion little tiny chops.

If you want to add carrots, or peas or sprouts that will be good too, but I dont really like them and end up picking out the peas and carrots.

You will need an egg or two.

of course soy sauce


I took the rice in a pan with some oil, and fried it with the onion until the onion was soft. after that I added some small shrimp cut in half. I used frozen but if you wanna use fresh fine (i just need the fast route out so frozen is the route i have to take hehe)
once that is cooked together, I then push the rice mixture to one side of the pan and crack in the eggs on the other and scramble. once the eggs are cooked I blend together with the rice that is resting on the other side of the pan.
Mix together all ingredients and then add the soy sauce, taste it as you add, many of us do not have the same taste buds, so what may be good for me as far as how my soy sauce may not be for the next.

This was good :)

Garden Stuffed Potatoes



This was really good and I made some alterations to the recipe that I was introduced to :) Sooo Yumm!
My friend also made them and she added cheese to hers! Another great idea!

-baking potatoes (I found these individual ones wrapped in plastic, by Idaho, which you pop in the microwave! Soo easy and fast)

-Ranch Dressing (the recipe calls for ranch dressing - I actually bought sour cream and the ranch dressing MIX - oooh it was soo much better!)

- Chopped frozen brocolli

-1 small fried onion (fry until soft - but not brown)


Scoop out the pulp from the potatoes once they are done and cooled enough to touch.
mix in a bowl with brocolli, fried onions, and ranch mix. I added some salt for season and some butter as well.

Spoon in the mixture back into the potato shells and bake for 15 minutes.
